Our Mountain Flower Rebell with 51% fat in solids matures for six months. The fragrance is characterized by mild sour cream through to roasted malt notes. Its creamy, strong dough opens another spectrum of flavors with bittersweet chocolate and dark caramel - peppered with salty notes. By treating it with a brew of mountain flowers and vegetable charcoal, its aroma can slowly pervade the cheese.
